Make Patriotic Dark Chocolate Cupcakes

Pair this cupcake recipe with my easy hack on how to make store bought frosting better, along with my quick and easy Dollar Store Patriotic Cupcake Stand, and you’ll have a fun and festive patriotic centerpiece in no time.

 Make Patriotic Dark Chocolate Cupcakes

Quick and Easy Patriotic Dark Chocolate Cupcakes

Ingredients:

For the Cupcakes

  • 2 cups sugar
  • 1 3/4 cups all-purpose flour
  • 3/4 cup + 2 tablespoons unsweetened dark chocolate cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon fine sea salt
  • 2 eggs
  • 1 cup buttermilk
  • 1 cup strong black coffee
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • Patriotic cupcake wrapper and decorating kit

For the Frosting

  • canned vanilla frosting (Not the whipped variety)
  • 1 tbsp Pure Vanilla extract
  • 1/2 cup confectioners sugar

Make Patriotic Dark Chocolate Cupcakes

Directions:

For the Cupcakes

  1. Heat oven to 350°F. Line two 12-cup muffin tin with cupcake liners; set aside.
  2. In the bowl of a stand mixer fitted with the whisk attachment or in a large bowl with an electric mixer, combine the sugar, flour, cocoa, baking soda, baking powder and salt. Mix on low until dry ingredients are thoroughly combined.
  3. Add eggs, buttermilk, coffee, oil and vanilla. Beat on medium speed for about two minutes; the batter will be thin.
  4. Divide batter evenly among prepared muffin cups. Transfer muffin tin to oven and bake until a toothpick inserted into the center cupcake comes out clean, 22 to 25 minutes.
  5. Transfer muffin tins to a wire rack and let cupcakes cool completely.

For the Frosting

  1. Place the store-bought frosting in a bowl and begin whipping with an electric mixer or stand mixer.
  2. Add 1 tbsp Pure Vanilla extract.
  3. Slowly add about 1/2 cup confectioners sugar and continue whipping until a spatula will stand upright when placed in the middle of the frosting. If the spatula falls to one side, continue adding more confectioners sugar in small increments until the spatula will stand upright. For a stronger key lime flavor, continue slowly adding 1 tbsp + 1/2 cup confectioners sugar to frosting then taste & check consistency.
  4. Add one patriotic flag to each cupcake.
  5. Display on Patriotic Cupcake Stand. (Instructions below)

Patriotic Cupcake Stand

Project estimate:

  • Plastic goblet, $1
  • Plastic veggie tray, $1
  • Plastic plate, $1
  • Glue, on hand

Total:  $3

Using a strong adhesive (I used E6000), adhere a Dollar Store blue plastic goblet upside down in the center of a red flower-shaped veggie dip tray. Let dry.

Once dry, adhere a red plastic plate to the top of the upside down blue plastic goblet. Let dry.

Witch's Brew Cupcakes

I'm a big fan of Halloween and all of the fun stuff that comes along with it. I especially love fun homemade treats, but I don't always have the time (or patience, or crazy decorating skills) to make cute treats. On a recent trip to Dollar General I came up with an idea that both cute and simple, requiring no artistic skills at all: witch's brew cupcakes!

Project estimate:

  • Cupcake mix or ingredients, on hand or $1 and up
  • Frosting, on hand or $1 and up
  • Cupcake liners, on hand or $1
  • Plastic tubs, 3/$1 (so $4 for one dozen)
  • Pretzel sticks, on hand or $1

Total: $4 and up per dozen

Dollar General Halloween section

This year the Halloween selections at Dollar General include a ton of things I love! I could have filled a whole cart with all of the great stuff I found. I didn't go quite that crazy, but I did walk out with quite a few fun items.

One of the items that did come home with me were these cute little plastic tubs in packages of 3 for $1. They reminded me of little cauldrons, so I thought it would be neat to do something witchy with them. And they were just the right size for holding cupcakes!

Cupcakes

So of course, you'll need to make some cupcakes. If you're feeling like a bakerista, you can use your favorite from-scratch recipe, but I "cheated" and grabbed a boxed mix from Dollar General's baking section. Bake them and let them cool completely before you move on to decorating.

Tip: Since the cupcakes are presented inside of the plastic tubs you can't see the liners. I usually use fancy liners when I make cupcakes but in this case I used plain white liners as a money saver!

Witch's Brew Cupcakes Place a cupcake into each plastic tub. (I bought 4 packages of plastic tubs so I would have enough to make a dozen cupcakes.) There will be a little bit of extra space around the edges so make sure the cupcakes are centered as well as possible.

Mix up a batch of green frosting. You can either make the frosting from scratch or buy a tub of it, but either way you will want vanilla (or other white) so that you can dye it with food coloring. Add green food coloring until you reach the desired shade of green; I also added a few drops of yellow to get the color I wanted. Frost the cupcakes as you normally would – no need to be super fancy. I just threw mine into an icing bag and squeezed a blob onto the top of each one.

Finish the look by adding a sprinkle of green sugar to the top. I think this makes them look kind of fizzy!

Witch's Brew Cupcakes Just before serving, add a pretzel "spoon" to each cupcake. If you do this too far in advance the moisture in the cupcakes will make the pretzels get stale and mushy really fast, so the longer you wait to add them the better they will be! What do you think?

Do they look like little witch's cauldrons? (I know one thing for sure – they definitely didn't taste like they contained eye of newt or any other witchy ingredients. They were quite yummy!)

Here we come, running towards Spring, and Easter, so the 15th Iron Craft challenge of 2011 was “Bunny or Chick?
For this challenge, we focused on a material. PEEPS®! We were to take Peeps, and transform them into something new.

PEEPS

As back story, PEEPS® are an iconic Spring ‘treat’. They are Marshmallows, shaped like either yellow chicks or pink bunnies (Yellow and white PEEPS® chicks and bunnies came first, followed by pink, lavender, blue, green and orange). They are inexpensive, and bright, and artificial through and through. But there they are.

[Note from Melinda: They’re fun to make S’MEEPS with (s’mores with PEEPS). Although watching them puff up in the microwave is fun, roasting them over an open flame lets you watch their little eyes melt off!]

Our IC15 Submissions:

Rhonda Greene’s Submission: Chocolate Covered PEEPS

Rhonda's Peep Pops 

Rhonda’s mom LOVES Peeps, so she made these for her for her 60th birthday – chocolate covered Peeps! She used semi-sweet baking chocolate so that they wouldn’t be any more sugary than they are by nature. They turned out cute and sinfully yummy!

Rhonda made the chocolate covered Peeps on bamboo skewers and stuck them in a styrofoam circle to dry.  (You could also make this a display by putting the styrofoam in a flower pot, or adding decorative ribbon around the edges).

To wrap them, she used favor bags that she’d originally ordered to use for her wedding favors, but they were backordered and came in three days after the ceremony. Go figure! But they were the perfect size to put over the Peeps and tie off with some ribbon from her stash.

Rhonda boxed up a dozen of the finished, individually wrapped Peeps for her mom. Happy birthday, Rhonda’s mom!

Melinda Hileman’s Submission: Keep Calm and PEEP On Cupcake Tower

Melinda went all out and made a PEEPs cupcake tower.

The completely from scratch cupcakes consisted of a vanilla bean cupcake, vanilla bean creme brulee cream filling, vanilla bean buttercream and toasted PEEPs marshmallow fondant. Melinda isn’t a big fan of the taste of fondant, but this stuff was so good that she and her hubby enjoyed not only the fondant on the cupcakes, but some of the leftover fondant as well!

The cupcakes are topped with either a real PEEP, a paper PEEP or a “Stay Calm and PEEP On” topper.
